The FOGO Trial Waverley Council is rolling out a new Food Organics and Garden Organics (FOGO) service, starting with a one-year trial. Collections commenced in October 2024, with around 2000 households now able to put food scraps into their green organics bin, along with garden waste. These materials are collected and processed into compost at a commercial facility, transforming what would have been waste into a valuable resource. Why FOGO? This trial is a key step in Waverley’s commitment to a sustainable future. It’s part of our broader Waste Strategy, which aims to halve the amount of organic waste sent to landfill by 2030. Waste is a challenge we all share, and by offering new, convenient services like FOGO, we’re working with our community to reduce waste and protect the environment. State Government Mandate By 2030, all councils across New South Wales must provide a FOGO service, as outlined in the NSW Waste and Sustainable Materials Strategy 2041. In light of this, please be aware that for streets included in the trial, FOGO will be a permanent service; we do not intend to discontinue it after the trial ends. Instead, the insights we gather will guide us in expanding FOGO to all Waverley residents, creating a more sustainable community for everyone. Resource Recovery & Emission Reduction Did you know that in the average Waverley garbage bin, approximately 40% of waste is food? FOGO offers a powerful opportunity to divert that waste from landfill, recover valuable resources, and contribute to a circular economy. By participating in the trial, residents are also helping to reduce harmful greenhouse gas emissions generated when organic waste decomposes in landfill. |

Zero Waste Cooking (Wednesday 05/02) - Tickets live now
This 1.5 hour free workshop will guide you through different recipes and strategies for zero waste cooking. You will receive tips to preserve your food for longer and make more strategic decisions when grocery shopping. With a focus on creativity and attitudinal shifts to food, as well as practical lessons, you will learn how to make a zero waste recipe which you can take home.
Fermentation (Wednesday 26/02) - Tickets live now
Fermenting your own dying veggies or food scraps is a fantastic way to reduce food waste, which would otherwise head to landfill where it rots and emits significant greenhouse gases. Other benefits include engaging in a mindful practice, improving food flavour, strengthening gut microbiome and connecting with ancient traditions and culture. Come along and join us for this free 1.5 hour workshop, where you will learn different styles of fermentation, how to make your food last longer, meet like-minded people, and leave with TWO jars of food you have fermented yourself.
Food Preserving Workshop (Wednesday 26/03) - Tickets go live in February
This 2 hour, free workshop will include a talk on how and why to reduce waste by preserving vegetables, as well as historical traditions associated with this. Attendees will learn how to pickle their own seasonal vegetables and food scraps, leaving with a jar of homemade pickles.
Workshop: Learn to make beeswax food wrap (Wednesday 30/04) - Tickets go live in March
This free hands-on workshop focuses on reducing food waste through learning how to store food correctly and reusing scraps to reduce both waste & save money. Attendees will make their own beeswax wrap which they can take home and use instead of cling wrap, reducing reliance on single-use plastic.
